TODAY I MADE HOMEMADE PIZZA!!!!! I like to make pizza at least once a year, and today was THEEEE day.

I made one big and one little. The little pie was dried fig, goat cheese, carmelized onions and olive oil! It was so tasty….

The big guy was red sauce, fresh mozzerella, asparagus, mushrooms, carmelized onions and fresh basil. All my favorite toppings! I bought the dough fresh from a bread bakery on 10th street between Snyder and Jackson. Strange little place, with the friendliest baker and the BEST pizza dough.

How’s about some perfect Pimm’s cups? OKAY!

Betsy came over to enjoy the zza with me, and she suggested eating it like the Italians, with a knife and fork… and you know what, she was right. It was better that way.

Luckily I have some left overs to look forward to….

Emilia had me over for lunch last week and I got to see her awesome house. Her kitchen blew my mind… (and so did the lunch! homemade vegan burgers and an incredible salad!)

On Sunday Betsy and I went to HipCityVeg for lunch and ate it at Rittenhouse Square Park!!!! They seriously have the worst name ever, but SUCH GOOD FOOD!!!!

We shared the Arugula Taco Salad and the Crispy HipCity Ranch (DUMB NAME). Not so into the salad, but it was healthy! The Crispy HipCity Ranch was a vegan version of a crispy chicken sandwich….and IT RULED!!!!!! But lordy, that name is AWFUL. But I would order it again!

I also got the GREEN Lemonade! I believe it is kale lemonade sweetened with agave. It was so perfectly sweet and tart, i LOVED it.
I could eat there weekly, and might just do so! It’s really not that expensive, and it’s VERY healthy! And you can enjoy it at the park! I just wish they had a different name…. I feel so goofy asking someone if they want to get lunch at HipCityVeg. So instead I say “Wanna go be Hip at the City Veg?” HA!

Melissa came over for lunch and I made another asparagus tart! I can’t get enough!!! Tomorrow I’m going to make an asparagus PIZZA!!!!!

Breakfast ideas??? Oh here, try some steel cut oatmeal! I heard it’s the “better” kind to make. Try these steps!
+ Steel cut oats are 3:1 when cooking. 3 c. Water to 1 c. Oats
+ Bring to a boil in a pot
+ Reduce to a simmer, add some chopped dates and cinnamon!
+ Cook until thick and “creamy”
+ Add toppings! I used raisins, ground flax and sunflower seeds

Oh, and I can’t help but drink everything out of jars…

Sometimes I just crave scones. Maybe it’s because i’m a little Irish… But anywho, I made this vegan scone recipe from the cookbook Spork Fed. The recipe is for Lemon Ginger Scones, but I don’t really like ginger pasteries…CALL ME CRAZY! So I made fig (dried) and pecan scones. And they were…so….GOOD.

They were even good the next day without toasting OR butter!

The other night I made an asparagus tart! I got the recipe from a tumblr I recently started following called The Forest Feast. It was so easy and so flavorful and now that asparagus is in season i MUST EAT IT ALL. I used gruyere (instead of brie) and threw on some thin sliced onions and shallot instead of capers. Along with that i made a lovely salad with some really beautiful radishes and a homemade honey mustard balsamic dressing.

I also made some Pimm’s cups which are one of my MOST FAVORITE cocktails! Here’s a quick recipe:
+ 3 oz. Pimm’s
+ GOOD Ginger Beer
+ a big slice of lime
+ a couple cucumber slices

Bon Appetit!
